Rice with shrimp
Ingredients
(1 serving)
Peeled shrimp

Tomatoes

Avocado (pitted and peeled)

Soy sauce –
1 tablespoon (~15 ml)
Raw cane sugar –
1 tablespoon (~15 g)
Extra virgin olive oil –
to taste
Salt –
to taste

Avocado (pitted and peeled)

1 tablespoon (~15 g)

Instructions
Bring a pot of water to a boil for the rice. Once boiling, salt the water and cook the rice, stirring occasionally. When the rice is cooked, drain it.
Meanwhile, cut the tomatoes into cubes.
Heat a little oil in a skillet and sauté the tomatoes and shrimp for a few minutes, stirring occasionally.
Add the soy sauce and raw cane sugar. Mix well and continue cooking until the shrimp are cooked through.
In the meantime, peel and dice the avocado.
When the rice is cooked, add it to the skillet and stir-fry for a couple of minutes, mixing frequently.
Remove from heat, add the avocado, mix well, and serve.
