  • Potatoes500 g (starchy)
  • Eggs – 1
  • Salt – to taste
  • Sunflower oil – as needed, for frying

Mini draniki (Belarusian potato fritters)

  • Eggs – 1
  • Salt – to taste
  • Sunflower oil – as needed, for frying

Instructions

  1. Peel, rinse, and pat the potatoes dry. Grate them finely and let them sit for 10 minutes.
  2. Meanwhile, beat the egg in a small bowl.
  3. Transfer the grated potatoes in a large bowl, squeezing out any excess liquid first. Add the beaten egg, season with salt to taste, and mix well.
  4. Heat some sunflower oil in a frying pan.
  5. Spoon the potato mixture into the pan using a heaping teaspoon, flattening each portion slightly. Cook the draniki over medium heat, covered with a lid that has a steam vent, for about 15 minutes or until the bottoms are golden brown.
  6. Once the bottoms are golden and crisp, flip the draniki and cook until golden on the other side.
