Mini blini with lumpfish caviar

Ingredients (40 pcs)

  • Cream cheese100 g
  • Lumpfish caviar80 g
  • Fresh dill – for garnish
  • For the blini

  • Flour100 g
  • Eggs – 1/2
  • Milk – 100 ml
  • Apple cider vinegar (5%) – 1 tbsp (8 g)
  • Sunflower oil – 1 tbsp (8 g)
  • Salt – 1/4 tsp (1.5 g)
  • Baking soda – 1/4 tsp (1.5 g)

  • Lumpfish caviar80 g

  • For the blini

  • Flour100 g
  • Eggs – 1/2
  • Milk – 100 ml
  • Apple cider vinegar (5%) – 1 tbsp (8 g)
  • Sunflower oil – 1 tbsp (8 g)
  • Salt – 1/4 tsp (1.5 g)
  • Baking soda – 1/4 tsp (1.5 g)

Instructions

  1. Using the blini ingredients, prepare mini blini (without sugar). Let them cool completely.
  2. Wash the dill and gently pat it dry.
  3. Once the blini have cooled, spread a layer of cream cheese on each. Top with lumpfish caviar.
  4. Garnish the plate with sprigs of dill and serve.
