Mini blini with salmon and avocado

Ingredients (40 pcs):

  • Smoked salmon150 g
  • Avocado (pitted and peeled)100 g
  • Cream cheese50 g
  • Lemon juice – 1 tbsp (8 g)
  • Salt – to taste
  • Fresh dill – for garnish
  • For the blini

  • Flour100 g
  • Eggs – 1/2
  • Milk – 100 ml
  • Apple cider vinegar (5%) – 1 tbsp (8 g)
  • Sunflower oil – 1 tbsp (8 g)
  • Salt – 1/4 tsp (1.5 g)
  • Baking soda – 1/4 tsp (1.5 g)

  • Smoked salmon150 g

  • Sunflower oil – 1 tbsp (8 g)
  • Salt – 1/4 tsp (1.5 g)
  • Baking soda – 1/4 tsp (1.5 g)

Instructions:

  1. Using the blini ingredients, prepare mini blini (without sugar). Let them cool.
  2. Wash and pat dry the dill.
  3. In a blender cup, combine the avocado, cream cheese, salt, and lemon juice. Blend with an immersion blender until smooth.
  4. Thinly slice the smoked salmon into small pieces, sized to fit the mini blini.
  5. Once the blini have cooled, spread a layer of avocado cream on each. Top with a piece of salmon, and garnish with a sprig of dill.
