Baked gnocchi with pumpkin and gorgonzola
Ingredients
(2 servings)
Potato gnocchi

400 g
Pumpkin (peeled and cleaned)

Gorgonzola cheese
–
80 g
Grated aged cheese –
to taste (~30 g)
Salt –
to taste
Black pepper (ground) –
to taste

Instructions
Prepare the
pumpkin purée
.
When the purée is ready, bring a pot of water to a boil. Once boiling, salt the water, cook the gnocchi, and drain.
While the gnocchi are cooking, cut the Gorgonzola into small pieces.
In a large bowl, combine the gnocchi, pumpkin purée, and Gorgonzola. Season with salt to taste and gently mix.
Transfer the mixture to a baking dish, add a pinch of black pepper, and sprinkle the grated cheese on top.
Bake under the broiler for 10-15 minutes, or until the cheese is golden and bubbly.
