Baked gnocchi with pumpkin and gorgonzola

Instructions

  1. Prepare the pumpkin purée.
  2. When the purée is ready, bring a pot of water to a boil. Once boiling, salt the water, cook the gnocchi, and drain.
  3. While the gnocchi are cooking, cut the Gorgonzola into small pieces.
  4. In a large bowl, combine the gnocchi, pumpkin purée, and Gorgonzola. Season with salt to taste and gently mix.
  5. Transfer the mixture to a baking dish, add a pinch of black pepper, and sprinkle the grated cheese on top.
  6. Bake under the broiler for 10-15 minutes, or until the cheese is golden and bubbly.
