Instructions
Preheat the oven to 180°C/350°F (160°C/320°F for a fan-assisted oven).
While the oven is heating, cut the pumpkin into cubes and arrange them on a baking tray lined with parchment paper.
Roast the pumpkin in the oven for 30-40 minutes (25-35 minutes for fan-assisted ovens), or until tender.
Once the pumpkin is cooked, remove it from the oven and let it cool slightly.
Use a blender to purée the pumpkin until smooth.
